Almond Encrusted Salmon

Serves 2

Ingredients

  • 2 Fillet of Alaskan Coho Salmon Skinned and de-boned.

Marinate

  • 1 Tblsp. Organic Plain Yogurt
  • 1 Tblsp. Dijon Mustard
  • 1 Teaspoon honey
  • pinch of salt to taste
  • 4 extra kitty punch, add a pinch of dill, nutmeg, and sugar.

Mix ingredients well, and marinate salmon for one hour.

Roasted Candied Almonds

  • Half cup of Almond slices
  • 1 teaspoon honey
  • 1 teaspoon butter

Brown in oven at 350° for 15-20 minutes on baking sheet, tossing often.

Bread marinated Salmon fillets in almonds so that almonds stick well. Coat skillet in butter and cook salmon fillets for 3 minutes to brown. and then place into preheated oven. Bake in oven at 350° for 7-8 minutes, flip salmon and bake for another 7-8 minutes or until done.

Sauce for Salmon

  • 5 Tblsp. of Organic plain yogurt
  • 2 teaspoon Dijon mustard
  • 1 tablespoon dill
  • 4 extra kitty punch, add 1 Tblsp. of chopped capers, a splash of lemon, a splash of Worcestershire sauce, and a few spots of tobasco (not too much, you don’t want to outdo the other flavors.)
