Ingredients
- 2 Sand Sole fillets
- 6 oz. Crab meat (drained)
- 1 Tbls. Mayonnaise (I recommend Best Foods)
- ¼ cup Panko (Japanese bread crumbs)
- 1 Teaspoon Cajun Spices
- 1 Tbls. Lemon juice
- 2 teaspoons chopped chive
- 2 diced tomatoes
- 3 Tbls. Capers
- Pinch of salt and pepper
Lay sole fillets flat, add salt, pepper, and ½ Tbls. lemon juice. Set to the side.
In a bowl, mix the drained crab meat, mayonnaise, panko, cajun spice, lemon juice, salt, pepper, and 2 teaspoons chopped chive.
Spoon 2 equal portions of crab mixture onto sole fillets and roll the sole fillets around the crab mixture so that the ends of the fillet lay underneath and the weight of the fish holds the wrap together.
Carefully place fillets in a pre-heated pan with oil. Top with diced tomato, capers, and Italian dressing.
Bake at 325° for 20 - 25 minutes. Serve over Rice with side of asparagus or vegetable of your choice.
