Tamale Masa Dough
- 1/2 package corn husks
- 2 cups Instant corn masa mix
- 2 cups lukewarm chicken or vegetable broth
- 1 Tbls. baking powder
- 1/2 teaspoon of salt
- 2/3 vegetable oil
Combine corn masa mix, baking powder, and salt into bowl, work in lukewarm broth with your fingers to make a soft moist dough. Add vegetable oil and mix iin until dough has a spongy texture.
Soak corn husks in water for a few minutes and rinse well.
Summer Corn Tamale Filling
- 1 can diced green chili's (drained)
- 1 cup fresh Summer corn
- 2 cups shredded cheddar cheese
In a bowl, mix the drained green chili's, corn, and cheese.
Lay out corn husks on flat surface. Spread masa dough evenly over corn husks and place tablespoon of tamale filling in center. Fold two sides over and tie ends with a ribbon of corn husk.
Place in steamer and cover with lid. Steam for approx. 1 hour.
Serve with rice, beans, and salsa.
